Foodie Files: Stuffed Peppers


I wanted to share this relatively easy dinner that has been part of my meal plan as of lately. Not only do these taste good, but they are easy to prepare ahead of time for a quick weeknight meal.

Here's what you'll need:

  • 4 Bell Peppers
  • Approx.1 lb of ground sausage (beef, chicken, or turkey will work too!)
  • Salsa
  • Cheddar Cheese


Step 1: Prep the Peppers
I cut the tops of the peppers off and remove any seeds.

Step 2: Cook your sausage
In a medium skillet, cook your ground sausage until the meat is brown. I add some salsa to the skillet. Depends on how much you like, I don't measure. Usually half a jar or so.

Step 3: Stuff the peppers!
Using a big spoon I fill the peppers with the sausage/salsa mixture. From here you can cover and put these into the fridge and pull them out when you're ready for dinner.

Step 4: Cook the Stuff Peppers
When you're ready, pre-heat the oven to 350 and let these cook for about 10 minutes, or until the meat is completely heated through. After 10 minutes, top with the shredded cheddar cheese and cook a few more minutes until the cheese is melted.
